It's hard to know where Bob Evans Restaurants fit into the pantheon of the "classic American roadside," but as the AP obit of
the chains owner relates, it certainly has its roots in much of the same "build a better mousetrap" ethic that drove other chain
operators, such as Dave Thomas and the McDonald brothers.
